Knowing the temperature without a Cooking thermometer?

I am making a nougat recipe
it said i need to let the sugar & corn syrup get up to 330 degrees then turn off the fire.
I don’t have a thermometer and I already started so I cannot go out and get one, it’s too late.
What can I do?

You drop some of the syrup in cold water and watch what it does. There are different stages depending on the temperature of the syrup. This website has a chart with all the info:
